Cast Iron Long Broiler Pan

This item at Smith’s Tavern is a cast iron long broiler pan.

The cast iron #7 long broiler pan was made by the Grover Stove Co.  It was patented in 1860 by Brooks and Grover for use on a coal or wood stove.  It was designed to bring the heat to all sides of the meat to seal in juices while allowing smoke to escape through the chimney.
