Historic Tools of North Castle

Cast Iron Sausage Maker

This tool at Smith’s Tavern is a cast iron sausage stuffer.  It has a long handle attached to a plunger inside the “J” shaped device.  The tool was permanently mounted by its three legs.  There are no manufacturer’s markings on this device.

The sausage casing was attached and held to the spout end of the device; the ground and seasoned meat would be loaded into the top open end and another worker would use the handle to press the meat into the casing.
