This tool at Smith’s Tavern was used when cooking soups, stock or drawn butter. The tool is made of metal with a long handle and a circular bowl at the end that is half-covered with a metal plate with straining holes. It could be used to skim off fat or any other byproducts not necessary to the foods final preparation.
